Cooking with Apples
(STLMoms) – It’s apple picking seasonand while we love biting into a juicy apple, there are plenty of other things you can do with them.
Dan Brewer is a chef and instructor from SLU’s Department of Nutrition and Dietetics to show you a couple of great ideas.
Here’s an applesauce receipe:
Makes 4 cups
½ cup water
2 T lemon juice
3 # apples, stems removed, cored, and diced
to taste honey or sugar
Combine water, lemon juice, and apples in stockpot and bring to a boil then drop to a simmer. Run through a food mill if desired. sweeten off the heat as desired.
Makes one sandwich
½ each apple
1 oz brie cheese
1 cup arugula
1 T honey mustard (2 t wholegrain mustard + 1 t honey)
2 slices whole wheat bread
Combine honey and mustard together then spread on each slice of bread. Build sandwich laying apples and cheese then topping with arugula.
